The Falcone family estate sits in the hills above Santa Maria di Licodia in Contrada Cavaliere, where in 1990 — when very few producers were operating on Mount Etna — the family began replanting, retraining, and reorganizing old vines and terraces. They worked with agronomist Giovanni Marletta and later engaged a consulting winery for modern winemaking, aging, and bottling. The first release was Aitho, a pure Nerello Mascalese named after an ancient nickname for Mount Etna.
