Started from nothing in 2011 near Randazzo, Ayunta farms just 2.8 hectares of indigenous vines at 700 metres on Etna’s north side. The winemaking philosophy is deliberately minimal: hand-harvested fruit, no additives beyond a touch of sulphur, and wines released only when the family judges them ready.
